Culture/Mädeniet Exploring the Potential of Kazakh Ingredients/カザフスタンの食材が持つ可能性について
Good evening. I was recently looking up Kazakh cuisine online and became interested in some ingredients I hadn’t known about before. I’ve never actually been there, so I can only imagine what they taste like, but here’s what I came up with. Would a comment like this from a foreigner be considered rude?
① Epi with Horse Meat and Kurt Sauce
I think it would be delicious to spread Kurt sauce on rolled-out bread dough, top it with thin slices of horse meat that have been stir-fried with pepper and cooled, roll it up into an “epi” shape, and bake it.
I got the idea because Japanese bakeries sell all kinds of bread with various fillings rolled inside, like custard-filled buns and sausage rolls.
I’ve never eaten horse meat, and I couldn’t find kurt online, so I can’t test this recipe…
② Gelato with Balkaymak
It wouldn’t just be great as gelato—it would also be wonderful to top vanilla ice cream with Balkaymak and sprinkle it with chopped almonds.
③ Balkaymak Macchiato
Since caramel macchiato is already a commercial product, this sounds delicious.
④ Desserts Using Balkaymak
It would taste great used as apple pie filling or drizzled on top. It would also be delicious kneaded into dough when making donuts, or drizzled over plain donuts—and it would look great in photos, too.
When I searched for “Balkaymak” without including “Kazakhstan” in the search bar, results for the Turkish version also came up, which was a bit confusing.
Since making Balkaymak takes time and effort, I wonder if it’ll be limited to a certain number of servings per day.
I recently found a website that provides recipes for Kuzul Ilimshik in Japanese. Is my understanding correct that Ak Ilimshik is made by skimming the cream off milk, mixing it with butter, and then cooking it down to remove the moisture?
Also, does the freshly skimmed, moisture-rich version have a different name? I thought it would be delicious in a hamburg steak.
In Kazakhstan, when making new variations of bread, do you add camel or horse milk to the dough water? Or do you use powdered versions, like skim milk?
I’m curious about what kind of bread you’d get if you crumbled kurt and kneaded it into the dough after the first rise. Would it be better to mix it into the dough before it’s shaped and set aside for fermentation…? It seems like this would expand the variety of savory breads.
Will I be able to try it if I visit the country?
The flavor of dairy products probably varies by region, so I wonder if they sell any “tasting sets” to compare them…

こんばんは。最近カザフスタンの料理をネットで見ていたら、これまで知らなかった食材に興味を持ちました。まだ現地に行ったことがなく、味を想像する事しか出来ないんですが、こんなのを思いつきました。外国人からのこのような発言は失礼になるでしょうか。
①馬肉とクルトソースのエピ
広げたパン生地にクルトソースを塗って、胡椒で炒めて冷ました薄切りの馬肉を載せて巻き込んで、エピの形にして焼いたら美味しそうだなあと思います。
日本のパン屋さんではクリームパンやウインナーロールみたいに、色んな食材を巻き込んだパンが色々売ってるから思いつきました。馬肉は食べたことがなくてクルトもオンライン通販で見つけられなかったから試作できません…。
②バルカイマクのジェラート
ジェラートだけじゃなくてバニラアイスにバルカイマクをかけてアーモンドダイスを散らしても素敵です。
③バルカイマクマキアート
キャラメルマキアートが商品化されてますし、美味しそうです。
④バルカイマクを使ったお菓子
アップルパイのフィリングに使っても、上からかけても美味しそうです。ドーナツ作る時に生地に練り込んだり、プレーンのドーナツの上からかけても美味しそうだし写真映えもしそう。
カザフスタンを入れずにバルカイマクだけで検索欄に入力すると、トルコ発祥のものも同時に表示されてちょっと混乱しました。
バルカイマクを作るのに手間暇がかかるから、一日○食限定とかになるのかな。
最近クズル・イリムシクのレシピを日本語で書いてくれているサイトを見つけたんです。牛乳から分離したものを引き上げて、バターと混ぜて水分を飛ばしたものがアク・イリムシクになるという理解で合っていますか?
また、引き上げたての水分を含んだものには、別の名前が付きますか?ハンバーグに入れたら美味しそうだと思いました。
カザフスタンでは、新しいアレンジのパンを作る時は仕込み水にラクダや馬のミルクを入れたりしますか?それともスキムミルクみたいに粉末状にしたものを使うのでしょうか?
クルトを砕いて一次発酵後のパン生地に練り込んだらどんな味のパンができるのか気になっています。発酵させる前の一纏めにした生地へ混ぜた方が良いのかな……?お惣菜パンの種類が増えそうです。
現地に行ったら食べられますか?
地域によって乳製品の風味とか変わりそうですし、食べ比べセットとか売ってたりするのかな…。

Politics/Saiasat What do Kazakhs think of us Uzbeks?
I've heard from almost all of my Kazakh colleagues that they think of Uzbekistan as an "underdeveloped country". It seemed like they meant "superior". When I asked why, they said they were taught that way at schools, and the media actually portrays it as such. Is that actually true? How do you guys see us politically? (Except for food and tourism).
How do you feel about an EU-like union either with Turkic speaking states or Central Asian states, if we talk hypothetically.
Edited: In Uzbekistan, Kazakhs are perceived as the closest allies and are often called "brother-nation".

Тяжело казахстанцу поверить, что в этой стране можно хоть что-то сделать. Ему это звучит наивно, инфантильно
Коррупцию не искоренишь, Дубай не построишь, производство не запустишь, культуру не поднимешь
Казахстанца совершенно невозможно зажечь никакой национальной амбицией, ибо он не верит в успех чего-либо, ему все кажется нереальным и наивным и инфантильным
Давайте тогда признаем все дружно, что мы эту страну никогда не разовьем, и она нужна только лишь для того, чтобы дети чинушей наслаждались жизнью в Европе и США, чтобы они могли качать отсюда богатство
Видимо ни для чего другого мы не нужны и не будем :/

Discussion/Talqylau Why doesn't Kazakhstan have an official IFPI music association?
Hey everyone, I was recently looking into the IFPI (International Federation of the Phonographic Industry) and their global list of national music associations. They have official affiliates all over the world certifying music sales and streams like the RIAA in the US, BPI in the UK, and RIAJ in Japan. Even countries like Nigeria, Indonesia, and various regional bodies are making moves or are already firmly on the radar. But Kazakhstan surprisingly doesn't have an official national music industry association affiliated with the IFPI.
We have one of the most booming, vibrant independent music scenes in Eurasia right now, spanning Q-pop, incredible hip-hop, and indie artists gaining millions of streams globally. Yet, structurally, we don't have a unified domestic body tracking official charts or handing out legal Gold and Platinum certifications the way global industries do. From what I understand, a lot of it comes down to how our copyright system is set up. The government has pushed heavily toward state-controlled digital licensing and platforms like Kazpatent rather than letting independent, market-driven associations handle it. This is compounded by massive fragmentation and historical transparency issues with local CMOs (Collective Management Organizations) trying to collect royalties, which often forces our top artists to distribute their music through foreign pipelines instead of a centralized Kazakh industry.
I'm curious to hear from anyone who works in the local creative industry or just follows the music scene closely. Do you think having a formal IFPI affiliate would actually help Kazakh artists, or do global digital distributors like Spotify and Apple Music make local associations obsolete anyway? I am also wondering if the government will ever loosen its grip on copyright infrastructure to allow a truly independent music association to form, and who you think is currently doing the best job at tracking and protecting music rights inside the country right now. Would love to hear your thoughts!

How many Tolengits Kazakhs do have?
Tolengits, what do you know about your origin?
Historically Tolengits had heterogeneous origin. Do you have sub"ru"s (small ru in big ru)? What ru's symbols (animals, trees or something else) and legends do you have?
Where (regions of Kazakhstan) majority of Tolengits do live? Or they aren't concentrated anywhere?
Did you do DNA tests? Do you know about special DNA researching of Tolengits? I heard DNA researchings are very developed in Kazakhstan. I heard about Kazakh history scientist Jaksilik Sabitov who promotes DNA researchings in Kazakh rus.

Tourism/Turizm horse trek recommendations kazakhstan?
i wanted to do a horse trek in kyrgyzstan but cannot find any tourguid where i feel confident that they treat the horses well. I found 1 but that was for 10 days and im looking for 2 to 5 days max. Now ive seen 2 stables in kazakhstan where the horses look relatively well cared for (Equestrian club "Almaty Horse Explorers" and shymbulak horse riding). But they seem to only offer rides for a few hours and not any horsetrekking. Does anyone know a good horse trek tour in kazakhstan with well cared for horses?

We feel like everyone we see on the street have iPhone 17 pro, which seems surprising to me considering that for example me and most of my family could barely afford it and we are changing phones once every few years..
And these stores? Are the phones genuine there? I think we saw even the newest 18 which is suspicious??

В ОАЭ где-то 12 млн. человек, и только где-то 11% - это коренные арабы, это где-то 1,33 млн. человек
И разве арабы стали менее властны? Разве шейхи и эмиры не могут просто взять и нахер всех послать и выгнать, если им так будет нужно?
У нас часто боятся мигрантов, но насколько их в реальности нужно бояться? Я вот местных казахов боюсь больше индусов. Казахи меня обижали чаще них, хоть и много хороших казахов. Ни один индус меня не обидел
