Vegetarian🥬 Finally nailed a falafel that doesn't fall apart (pan-fried AND air fryer versions)
I've tried making falafel probably five times over the years and always ended up with either mush or hockey pucks. I finally landed on a version that holds together and has that crispy-outside, herby-green-inside thing you get at a good falafel shop.
The trick that made the biggest difference for me was not over-processing the chickpeas, you want texture, not a paste. Did a batch pan-fried and a batch in the air fryer to compare. Pan-fried wins on crunch, air fryer wins on not smelling like oil for two days. Both good, depends on your mood.
Made a quick tahini sauce to go with it, just tahini, lemon juice, a bit of water to thin it out, and salt. Takes five minutes while the falafel cooks.

Best way to reheat pizza without it getting soggy?
I've got leftover pizza from last night and I'm tired of the microwave turning it into a chewy mess. Someone told me to use the oven but at what temp and for how long? Does it matter if it's pepperoni vs like a veggie pizza or is the method the same?

watched Tony and realized most people have no idea what goes on in restaurant kitchens
gamma.appwatched Tony over the weekend and it sent me back to Kitchen Confidential, which is still wilder than the film. the movie only covers his first summer in Provincetown, all the restaurant stuff comes later in the book.
the famous one is don't order fish on monday. what nobody mentions is bourdain took it back. he did a video in 2016 saying eat the fish, standards had improved, the markets weren't closed on weekends anymore. the rule came from a 1999 piece and was already out of date by the time everyone started quoting it.
brunch is where the week's odd bits get used up. the special is often whatever needs to go before it turns. order a steak well done and you get the worst cut, because the cooking hides it. his line was that you pay for the privilege of eating their garbage.

The mental load of grocery shopping
Working mum here and planning for dinner is probably my most dreaded task of the week.
There is so much to keep track of and I have come home so many times with stuff we either already have, or the other way around!
I've been thinking about whether there’s a way to make the weekly shop a bit easier and cheaper. I’ve come up with two ideas and would love some honest opinions:
A. Recipe card box
A nice box of recipe cards that you can mix and match to work out dinner without your phone. Plus the ingredients across the various meals are used interchangeably so you buy less and waste less.
B. Smart food pouches
Reusable silicone pouches with app integration to send you a reminder when food is approaching it's use by date plus recipe ideas what to make with it. It would also allow you to check what's in the fridge when you are at the supermarket.
Which one would you be more likely to buy?
Or have you figured out a way to solve this?
