I installed graphene OS, that helps a bit. Unfortunately I cannot not have a phone.

It depends on which field you work in, and a lot of other stuff. Lots of companies require work apps. Most things in life require a smartphone now.

The best option would be if we actually passed laws making basically everything they collect on us illegal to collect. But that would require participating in society and your local elections.

You are being dense on purpose. Everything is being digitalized and moved to apps. Even governments are digitalizing. I have to use apps on my job as well. I even have to use an app to check which chargers are available to charge my car. The world isn't what it was. I choose to minimize the spyware around me, hence graphene os, but not having a smartphone nowadays is unthinkable.

What isn't unthinkable, at all, is not having alexa in your home.

A phone is a modern necessity unfortunately, an Alexa is not and is literally just Spyware
