It was definately the worst shift possible, but I used to do Sunday mornings in exchange for Friday night and a double on Saturday, with the rest of the week off.

Most of the other servers only got one of those shifts but I figured out early that those three shifts together make you more money than any one of them plus all the weekday evenings. I was good enough that they agreed and just made that my normal schedule. It helped that half the other servers outright refused to work Sundays no matter what they offered, and the rest of them weren't great to begin with and complained even when they did show up.
