Gas stove intermittent ticking noise and slight flare of orange flame… what is causing this?

Forgot to add: this is occurring on all the burners, not just one of them.

Your ignition system has a glitch. Likely a dirty flame detector. Or one of your knobs is loose

This. And as far as the orange that’s normal. If you use a fork and tap the burner head you see lots of orange. It’s stuff being knocked loose and burned. The ticking is likely just dislodging little particles of dust/debris/food/whatever else.

We call it ghost sparking. I see it a lot after a boil over or when someone cleans with too much water.
