Roast beef with snails and herbs, Yorkshire pudding, tomato three ways, veal jus

The dish is a translation of Wonderwall by Oasis.

The tomato is on the plate three times: a seared slice, small ones roasted whole, and a sauce reduced over six hours. The sauce gets no seasoning at all, not even salt.

This is just 6 components seperate on a plate and not a combined dish, only the veal jus and beef and pudding are remotely connected. There needs to be cohesion.

Fair point. The separation is deliberate - each element stands for a different part of the song, so they were built as separate things. The jus is the link. How would you have built more cohesion without losing the three tomato states?

The song starts quiet and builds, so the tomato does the same across the plate: a seared slice, small ones roasted whole, and a sauce reduced for six hours until there's almost nothing left of it. That sauce gets no seasoning at all, not even salt — by then it's nothing but concentrated tomato. The Yorkshire pudding is the "maybe". The idea is that you hand control over the moment it goes into the oven. The jus is "you gonna be the one that saves me" the one component the chef is completely sure of. And the snails are "I don't believe that anybody feels the way I do about you now". Not everyone likes them, and that's exactly why they're there.

The song is broken down into various elements. Pub kitchen is the base. The way the song grows: tomato in three stages. By the end it's nothing but concentrated tomato. The "maybe": the Yorkshire pudding. You hand control over the moment it goes into the oven. The jus is the opposite "you gonna be the one that saves me", the one component the chef is completely sure of. The snails: "I don't believe that anybody feels the way I do about you now". Not everyone likes them, and that's exactly why they're there.

Well, it's the "maybe" in the song, the part about letting go. The idea is that you hand control over the moment it goes into the oven. That's what the pudding is doing there.

Gross. Is this connected to Wonderwall because the diner will leave and think to themselves, as they head to the next restaurant, “You’re going to be the one who saves me”?

I don’t believe that anybody feels the way you do about this plate now.

Tomato in three intensities: fresh and acidic in the seared slice, sweeter in the roasted ones, and concentrated down to almost pure tomato in the sauce. The beef stays mild against that, the herb and snail carries the savoury side, and the jus and pudding are the weight underneath.

There is no prescribes an order. Whichever component you'd want to try first, that one is the right one.

Can you explain the reasons of the 3 way tomatoes? Perhaps the way to serve this would’ve been a 3 course meal to “represent” the different elements of the song. IMO this plating doesn’t work and isn’t appealing. If I had the tomatos, snails and the beef etc separate it would have a better appeal

The tomato is the way the song grows. It starts thin and gets denser: a seared slice, then small ones roasted whole, then six hours of reduction until there's nothing left but concentrated tomato. Three steps of one thing, not three ideas.

The three-course version is a fair point and it would be easier to read. But the song is one piece, not three movements - it all happens at the same time, so it had to be one plate. Whether that's worth the loss in appeal is the honest argument.

You just described a structure to how the food should be eaten right there… perhaps the plating and presentation should follow that to better resemble your idea and song

That's a good point. The dish was built for a video - in the episode the components come one after another, so the sequence exists. That doesn't make you wrong about the plating.
